Cocktail bar Next Door to open on the waterfront in Camana Bay

Next Door is the latest offering from Walter Fajette and Cristiano Vincentini, owners of Agua.

The newest food and beverage establishment to open in Camana Bay promises a fresh cocktail experience with a classic bar environment that will appeal to all. Opening in July, Next Door – as its name suggests – is located directly adjacent to its owners’ existing Camana Bay restaurant, Agua.

Restaurateurs Walter Fajette and Cristiano Vincentini set their sights on opening Next Door during the COVID-19 pandemic. Rather than being intimidated by the challenges the pandemic and subsequent Cayman Islands border closures posed for the hospitality industry, Fajette and Vincentini seized the opportunity to expand.

“We decided to take that time to adapt our business model, taking on additional space next door with a view to creating a classic, speakeasy-style bar that will be the venue in which everyone wants to start or end their night,” said Fajette.

Agua bartenders Matt Fitzgerald and Corey Scruggs will be at the bar’s helm and create an inventive menu of cocktails that celebrate Cayman’s traditions. The restaurant group’s new Operations Manager Wayne Epple explained the influence that Caymanian bush medicine has had on the menu.

“Traditionally Caymanians used herbs and passed-down recipes to heal a number of ailments,” he said. “We are going to use those same herbs and spices with some local fruits in our cocktails. We are excited to launch a menu that is community-driven, inclusive and very much of Cayman.”

In addition to the Cayman-inspired cocktail menu will be a bar bites menu created by Agua’s executive chef Jon Herzog, providing ideal bites explained by Epple as “elegant bar food”, to complement the bar’s drinks offerings. The décor of the bar will add to the ambience, whether guests are enjoying a lively outdoor lounge furnished with items brought in from Italy, or the modern interiors that offer eclectically designed, low-lit booths, Chesterfield sofas and pocketed seating spots, partially inspired by Prohibition-era watering holes.

“Next Door is designed to offer an experience from start to finish,” added Epple. “From an interactive, social food delivery with our staff and a conversational space to a satisfying menu of shared plates, the bar will be ideal for those going to or coming from a date night at the movies or a company hosting a social with clients or their team members.”
