Bar Carnivore raises the steaks

From cuts to cocktails and so much more — say hello to Bar Carnivore.

Carnivore, Camana Bay's bespoke butcher shop, recently launched Bar Carnivore, a full-service dining experience with a new menu, beverage programme and freshly designed dining area.

"We launched Bar Carnivore because we felt the Carnivore brand had a lot more to offer than just fantastic burgers and sandwiches at lunch," owner Dylan Benoit said. "Now with our selection of creative appetisers, steak tasting flights, fresh seafood and even vegetarian dishes, there is more to enjoy from your favourite butcher shop."

Benoit created the new menu, and it was manager Kelsey Mitchell who curated the new cocktail offerings. With a "food-forward" concept in mind, Bar Carnivore offers classic and signature drinks carefully crafted in a way that pairs well with the menu while using only the best ingredients.

"Beef and bacon fat-washed spirits, shiitake mushroom-infused Japanese whiskey, coconut-infused Campari are just some examples of how we use non-traditional ingredients to tie our cocktails to the food menu," Benoit said.

Looking for something spirit-forward? Try the Caribbean Negroni with coconut-infused Campari. The Island Inferno — a guava margarita featuring guavas from Benoit's garden — is another. For something light and refreshing, order the Wildflower: gin, elderflower liqueur and charred pineapple syrup topped with soda.

Carnivore also partnered with Trio Architecture's design director Carolina Hane for a rethought outdoor dining concept aimed for anything from a romantic dinner to a lively get-together. Bar Carnivore opens daily at 5 p.m. and runs until 10 p.m. on Tuesdays, Wednesdays and Sundays and until midnight Thursday through Saturday. Carnivore continues to open at 11 a.m. Tuesday through Sunday for its lunch menu and butcher shop services.
